- Milk ............................................ 500 g
- Heavy cream 30% ............ 50 g
- Egg yolks ............................... 4
- Sugar ........................................ 125 g
- Vanilla Extract .................. 15 g
- Mix the milk, cream and vanilla extract in a saucepan.
- Bring it to a boil, then take it off the heat and infuse it with the lid on for approx. 10 minutes.
- In the meantime, beat the egg yolks and sugar until you get a cloud.
- Gradually combine the milk mixture with the egg yolks, using a whisk to help you mix them in.
- Pour the mixture into a saucepan and cook on a low heat, stirring all the while, until it thickens. It should coat the back of a spoon.
- Stop cooking and leave it to set for approx. 1 hour in the refrigerator.
- Once it is cool, put it in a sorbet machine until it has the texture you want.
