ingredients

  • Milk ............................................ 500 g
  • Heavy cream 30% ............ 50 g
  • Egg yolks ............................... 4
  • Sugar ........................................ 125 g
  • Vanilla Extract ..................  15 g


Steps

  • Mix the milk, cream and vanilla extract in a saucepan.
  • Bring it to a boil, then take it off the heat and infuse it with the lid on for approx. 10 minutes.
  • In the meantime, beat the egg yolks and sugar until you get a cloud.
  • Gradually combine the milk mixture with the egg yolks, using a whisk to help you mix them in.
  • Pour the mixture into a saucepan and cook on a low heat, stirring all the while, until it thickens. It should coat the back of a spoon.
  • Stop cooking and leave it to set for approx. 1 hour in the refrigerator.
  • Once it is cool, put it in a sorbet machine until it has the texture you want.
